Baked potatoes with rice and veggies

Another simple recipe that I make on days when I dont want to put tons of effort into making dinner…which is more often than I care to admit.

Easy as 1,2,3…4!

1. Wash desired amount of potatoes. Pierce with  a fork 4-5 time in various places. Rub with olive oil  and sprinkle some garlic. Bake on a baking sheet at 350 or 375 (depending on your oven) for an hour.

2. About half an hour into baking start your rice. Mine takes about 30min total to come to a boil and simmer for 20min. 

3. Steam or roast whatever veggies you desire. I prefer to steam ours in the microwave for this meal. We do mixed veggies, broccoli or even squash depending whats on hand.

4. Layer everything onto the potatoe and add ranch dressing. This is the recipe I use and store.
