Chiptole taquitos

My husband loves Chipotle! Minus the rice, which I sometimes use, this taste similar to their burritos! Packed full of flavor and soooo good.

Recipe

1 15oz can of corn  drained and rinsed
1 15oz can of black beans drained and rinsed
1 small onion, peeled and diced.
1 jalapeño deseeded and diced
1 small lime
1 cup diced cherry tomatoes & mini bell peppers
4-5tbs of minced cilantro
1 tsp of garlic powder
1/2 tsp of paprika
1/2 tsp chili powder
1/2 tsp cumin
10 medium size flour tortillas
Optional: 1/2 cup of shredded cheese


Preheat oven to 400 degrees
.

In a medium size bowl I combine everything except the lime, shredded cheese and tortillas.  Mix in spices and then put it inside my blender and pulse 2-3 times to slightly chop and mix.

After I blend it I put it back inside the bowl and add the lime. If you haven’t bought a hand held lime squeezer you need to! I bought a lemon one so I could use it for both 🙂

Heat tortillas for 10 secs in the microwave and then add 4-5tbs of the filling.

Roll and place seam down on a greased baking sheet. Brush lightly with olive oil.

Bake for 12-15min or until golden brown!
