Melt in your mouth snickerdoodles!

Hello cookie lovers,

I’ve always loved to bake and as a teen would make cookies 1-2 times a month to share with people.

 The cookie recipe I made the most was snickerdoodles. I usually always had the stuff on hand so it was easy to do at last minute without running to the store. 

Over the years I’ve tweaked various recipes. My friend passed on the tip to use cream of tarter for fluffier cookies. I’ve also become addicted to pastry flour!

These are always a crowd pleaser and melt in your mouth! 

Recipe:

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup white sugar
  • 1/3 cup brown sugar, packed
  • 1 large egg
  • 1 tso vanilla
  • 1 1/2 cups pastry flour (or all purpose)
  • 1 tsp baking powder (or 1/2 tsp baking soda)
  • 1/4 tsp cream of tarter
  • 1/4 tsp salt (or not)

Extra ingredients for rolling: cinnamon sugar

Note:Large mixing bowl is easier but I usually just use the container I’ll refrigerate it in. 

Beat together sugar and butter until creamy. 

Mix in the egg and vanilla .

Mix in dry ingredients.

Scrape sides and refrigerate for  1 hour (minimum).

Form into balls (1-2 tbs in size mine were 2) and roll in cinnamon sugar.

Lay on greased baking sheet. Lightly press down on balls (I use a fork).

Makes 12 cookies…or 9 & some small ones 😉

Bake at 350 for 9-10min (dont over bake, tops wont be totally set)

Cool for 10min on baking sheet.
