This week our meals were mostly previous ones I’ve posted and a few new.
This bean burrito recipe is one of easiest meals you can make though!
Directions:
- Put 1lb of washed dry beans in your crockpot.
- Fill crockpot 1-2in from the top with water.
- Sprinkle 2-4tbs of chicken bullion.
- Add 1/2 onion on top (not diced).
- Cook on low 8-10hrs.
My mom made beans on the stove a lot all growing up but the crockpot is so much easier!
We will often do half whole and half refried.
Note: All you do is put the beans in a blender or mixer and add juice little by little until it has the consistency you want for refried beans.
We use them whole in our Mexican pile up recipe, soups or to make the burritos shown below! We use the refried for tostados and navajo tacos.
Toppings used; lettuce, olives, greek yogurt, salsa, cheese, tomatoes, bell peppers and green onions!
I have friends who freeze their beans but I haven’t tried it myself yet 🙂
I have individually wrapped and froze bean and cheese burittos successfully!
