Our family loves camping! We bring a lot of food in our cooler including ready to go tin foil dinners. I have so many recipes I love and use often!
My husband went camping with his scout troop this last weekend and requested this recipe 🙂 I often bake these in the oven if it’s a quick campout so it only has to be reheated over the fire. (Cheating I know!)
Directions:
Preheat oven to 400-425, depending on your oven, I do 425.
Recipe is simple:
- 1 chicken breast sliced in 2
- 1 potatoe diced
- 1/3 cup diced broccoli (frozen or fresh)
- 1/2 cup cooked rice
- 2 slices of bacon cooked and crumbled
- 2-3tsp ranch seasoning
- Sprinkle of cheese
Mix everything together in a bowl and dump and wrap in aluminum foil.
Bake 25-30min until potatoes are tender and chicken is no longer pink.
It’s so quick, easy and delicious! I love doing a few different kinds of these for dinner every once in a while too!
When it gets warm enough for camping again I will have to compile a list 🙂
