Chicken Fajita soup

Hello fellow foodies,

My Mom taught me a lot about cooking growing up and like most utlized the crockpot every so often. I use it often  ðŸ˜‚

Anywho soups was always one of  my favorites! I made this recipe for the first time a couple of years ago and we both love it!

As you have probably guessed its super easy to make 😉 because that’s how I roll!

It’s pretty much a dump and go recipe but you do have to mix it a little.

Ingredients:

  • 1lb boneless/skinless chicken breasts
  • 2 (10.75 oz) cream of chicken soup **
  • 1 cup salsa
  • 1 cup frozen corn
  • 1 15oz can black beans
  • 1 1/2 cups water 
  • 1 tsp cumin

Toppings:

  • Tomatoes
  • Green onions
  • Mini bell peppers
  • Shredded lettuce
  • Tortilla chips
  • Cheese
  • Greek yogurt
  • Avocado

**Alternate dairy and gluten free cream of chicken recipe linked here. I cut the spice measurings in half.

Simply spray crockpot and place frozen chicken inside  (I always  use frozen).

In a large bowl mix all the ingredients together  and dump them on top of the chicken.

Cook on low 4-6hrs

Remove chicken, place in a medium size bowl and shred with a hand mixer on high! Return to crockpot and mix it back in. 

Cut up any desired toppings. I’m lazy when it’s just us and leave them on the cutting board. 

Serve in bowls and enjoy 🙂 I’d  say it serves 4 but  when we have 4 adults I like to serve it with salad and cheese crisps. It goes fast though so never hurts to double and I love having leftovers 🙂
