Twice baked potatoes 

Hello fellow foodies,

This week was a week for comfort food. This is my favorite way to make potatoes since  they’re ready to go and less of a mess. 

We will often just have these and a salad together but this week we had them with ranch bbq ribs.

I start off by washing 6-9 potatoes.  Rub them with olive oil, place on a baking sheet, pierce with a fork(in 3-4 places), sprinkle with  garlic salt and bake at 350/375 for 50-60min. 

Note: I’ve tried to do 45min but a couple of them don’t  have the center completly cooked through. 

After I pull them out, let them cool for 5-10min, I cut them in half and scoop out the centers into a bowl. Leaving the skins on the sheet.

After you have all the potato centers in a bowl mix in the following:

  • 1-2 tsp garlic salt and chili powder or 1/2 packet ranch
  • 3oz cream cheese
  • 1/4 cup greek yogurt (sour cream)
  • 1/4 cup vegan butter (regular butter)
  • Handful of cheese

I use a hand mixer to blend  it all together.

We will either eat them like this, mix in 1/2 cup of broccoli, or serve them (after they’ve baked) with some chili on top.

This time we had them with broccoli! Just spoon the desired amount back into each one. Bake at 375 for an additional 10-20min.

These are so easy to make! They are the perfect comfort food and freeze well! I’ll pop them into a gallon ziplock bag and just microwave for 2-3min. Delicious and convenient!
