Vegan cinnamon doughnut muffins

Hello fellow foodies,

I’ve made this recipe a couple times and it is a crowd favorite! 

Preheat oven to 400 degrees.

For the muffins:

  • 1 cup pastry flour (all purpose works too)
  • 3/4 cups whole wheat flour
  • 3/4 cup dark brown sugar
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 8oz applesauce  (unsweetened)
  • 4oz almond milk
  • 4oz olive oil (coconut or canola)
  • 2 tbs maple syrup

For the topping:

  • 2 tbs sugar
  • 1 tsp cinnamon

Mix together wet ingredients and then add dry ingrdients. 

Fill cupcake liners 2/3 full and sprinkle sugar mixture on top

Bake for 18-20min. Let cool before serving.

They’re so quick and easy to make!
