Hello fellow foodies,
We had our vegan friend over for dinner and I decided I wanted to do soup, salad, rolls, and dessert that were all vegan friendly.
I could easily alter my own bread recipe but decided to try something new. Found the original recipe here just made my breadsticks more like long rolls
For the dough:
- 2.5 teaspoons quick rising yeast
- 1 1/4 cup warm water
- 2 tbs brown sugar
- 1 tsp salt
- 1/4 cup olive oil
- 3 cups flour
For the topping:
- 3 cloves of garlic crushed
- 1.5 tbs oregano
- 3 tbs olive oil
Makes 8 breadsticks.
Directions:
Pour warm water into a large bowl and sprinkle on yeast and brown sugar. Takes about 20min to activate. It will look foamy.
Mix in salt, olive oil and flour. You can add more flour if it’s too sticky but do so sparingly.
It’s easier for me to divided the dough into balls and then roll them into sticks.
Mine are rolled pretty thick so they’re more like flat rolls which is perfect for soup.
Sit and let rise for 1-2hrs until they double in size. The more they rise the better. If we’re running short on time I’ll preheat my oven to it’s lowest setting (170) and turn it off. They rise within 20-30min inside the oven.
After the rolls have risen spread the olive oil mixture on top with a pastry brush.
Bake at 375 for 10-15min
