Hello fellow foodies,
I’m going to apologize now for the lack of pictures. The night I made this was crazy but it’s one of my most popular recipes so I wanted to share it.
I’ve done a similar recipe in the past with cream of chicken. Then I started using my alternate cream of chicken recipe until I saw everywhere that people subbed greek yogurt for cream of soups.
Brilliant! Plus it’s just as creamy and even more delicious 🙂
- 1lb chicken tenderloins
- 1 cup greek yogurt
- 1/4-1/3 cup olive oil mayo
- 1 tsp garlic powder
- 1tsp oregano
- 1 tsp minced onion
- 1/2 tsp cumin (optional )
- 1/2 lime juiced (optional)
- 1/2 cup mozerlla cheese (optional)
- Salt and pepper to taste.
- 1/2 cup Italian bread crumbs
- 3 tbs Parmesan cheese
Preheat oven to 350 degrees.
Start by spraying a 7x11in pan and add chicken to the bottom.
Next mix the Greek yogurt with all the spices and optional lime juice.
Once it is throughly mixed spread on top of the chicken breasts.
Lastly I mix the bread crumbs and parmesan cheese. I hate adding to dirty dishes so I usually just use a 1 cup measuring cup which helps to sprinkle it on top.
Note: If choosing to use mozzarella cheese sprinkle on top of yogurt before breadcrumbs.
Cover with aluminum foil and bake for 30-35min. Remove foil and broil for 5min (optional).
We love eating this alone with a side salad or on top of brown rice!
