Kielbasa (turkey sausage) hash

Hello fellow foodies,

This is one of the easiest and semi quick recipes I’ve made! 

My friend introduced me to this dinner hash reciepe. She uses kielbasa but our local store doesn’t always have it. 

Recipe:

  • 1 small onion
  • 1 green pepper
  • 1/2 red pepper
  • 4-5 medium potatoes 
  • 1lb turkey sausage links (or kielbasa)
  • Olive oil
  • Salt and pepper to taste

Before I’m ready to start dinner I will bake the potatoes at 350 for 30min. You could also microwave them but I like them to still be semi firm. 

Once those are ready I let them cool, peel off skins, and dice them.

Note:I’ll often make this after we’ve had baked potatoes for dinner so the potatoes are ready to go. Good way to spice up leftovers 🙂

Now for the easy part!

I use a large and medium size skillet for this recipe.

I start off by forming small balls/chunks from the turkey sausage links and cook them on medium high heat.

I then poor 2-3tbs of olive oil into the medium skillet and add diced potatoes. I cook those on medium high heat until slightly golden brown.

Once the meat is cooked throughly and the potatoes are crisp (8-10min) I add the potatoes in with the sausage and let them simmer (on low).

Next I add 1-2Tbs of olive oil and sautee the diced peppers and onions in the same medium skillet. Once they are transluecent I add them to the meat and potatoes.

Once I’ve mixed them all together I add salt and pepper to taste. Then you’re done!

Super simple, hearty and delicious! We’ve eaten it with ketchup, salsa, tortillas, rice and on its own. Very versatile 🙂
