Hello fellow foodies,
Tacos are popular in our home. We usually have them once every 2 weeks 🙈I have tons of taco recipes I rotate through though.
This one was inspired from my vegan 7 layer dip.
Note: I bought 3lb of ground turkey but plan to use the other pound for stuffed bell peppers next week.
- 2lb ground turkey
- 1/2 pck taco seasoning
- 1 14oz can black beans (drained and rinsed)
- 3/4-1 cup salsa
- 4-6 green onions (depends on size)
- 2 roma tomatoes
- 15 black olives (1/4-1/3 6oz can)
- 1 cup of plain Greek yogurt
- 1/2 tsp cumin (optional)
- Juice of 2 limes
- 1/3 cup cheese
- 1 avocado
First brown meat and drain juices. Add taco seasoning to meat and let simmer. (You can add this while browning but you will loose some when draining juices)
While meat is browning mix the Greek yogurt, limes and optional cumin.
Once the meat is seasoned and cooked add black beans and salsa until mixed throughly and heated through.
Spray 9×13 pan and dump meat mixture inside.
Spread the Greek yogurt on top of the meat mixture. Sprinkle on cheese (optional, I didn’t). Lastly add diced vegetables.
Bake at 350, covered, for 20-25min.
Garnish with avocado on top once it finishes baking (optional).
That’s it, you’re done!
My family devours this recipe! We eat it with tortillas, chips or by itself.
