Hello fellow foodies,
The prep for this recipe is a little more tedious but oh so worth it!
I made this really good sweet potato casserole over the summer and that’s kind of where this came from.
My family loves taquitos!
Ingredients for potatoes:
- 1lb sweet potato (orange or white) peeled and cubed
- 1/2 tsp cumin
- 1/2 tsp minced onion
- 1 tsp chili powder
- 1 tbs olive oil
Note: you can use 1/2 tsp onion salt and 1/2 tsp of chili powder with cumin instead
Ingredients for the rest of the filling:
- 1 tbs olive oil
- 2 cloves of garlic, minced
- 1 15oz can black beans, undrained
- 1tsp cumin
- 1/2 tsp salt
- 1-2 tsp oregano
- 10-12 burrito- whole wheat(or white) tortillas
Avocado sauce: (optional)
- 2-3 small avocados
- 1/4 cup greek yogurt (optional)
- 1 lime, juiced
- Salt to taste
This recipe has 3 parts but it’s super easy! Just takes a little extra time 🙂
First preheat the oven to 400 degrees
Mix the potatoes, olive oil and spices in a large bowl.
Line a baking sheet with aluminum foil and spread out the potatoes.
Bake the potatoes for 17-20min rotating once.
While the potatoes are baking you can start on the rest of the mixture.
Start off by sautéing the minced garlic in olive oil. After a few minutes add the black beans(undrained) and spices. Mix well and let simmer for 10min. Stirring occasionally.
Note:There will be a lot of liquid but the sweet potatoes will help to soak it up so don’t worry!
Once the potatoes are done preheat the oven to 425 degrees.
Add the potatoes to the bean mixture and mix together. Continue simmering until liquid is mostly absorbed. (3-5min)
Once absorbed, remove the mixture from the heat and add 3-4tbs of the mixture to the center of each tortilla.
Note: I used smaller whole wheat tortillas and put a little extra in each one and could make 10 but you can easily make 12.
Flip over the aluminum foil on your baking sheet and use the other side this time to lay out and bake the taquitos 😉 Bake for 15-17min.
While the taquitos are baking you can make the sauce.
I use a handmixer and medium size bowl. I mix the avocado first, by itself, to get out any lumps. Once it’s mixed well you can add the lime juice, yogurt and salt. You could use a food processor as well but I don’t have one yet.
That’s it your done! Let the taquitos cool and serve each one with a little sauce!
