Hello fellow foodies,
This is one of those dishes that was made out of pantry items in the middle of the week. I jotted it down after since it was a hit!
Ingredients:
- 1lb of hamburger (browned)
- Spanish Rice
- 1 15oz can of beans (drained and rinsed) just whatever you have on hand
- 1 14.5oz can of diced tomatoes with italian herbs (or diced green chiles)
- 2.5 bell peppers (sliced into strips and halved)
- 1/2 cup cheese*
Now for the recipe! The most time intensive part is browning the hamburger and cooking the spanish rice according to its package.
Once the rice and meat are done you can mix everything together in a bowl minus the bell peppers.
*Only stir in just over a quarter cup of cheese and use the rest to sprinkle on top.
Spray a 9×13 pan and pour mixture into it. Spread the mixture evenly in the pan. Top it off with the bell peppers and remaining cheese.
Cover with aluminum foil and bake at 375 for 30min.
Note: Bell peppers are still crisp so if you like them softer you can bake it an additional 10-15min.
Serve it up by itself or inside of tortillas!
