Mild taco soup (kid approved)

Hello fellow foodies,

I love spicey and mexican food! 💕 However I’m not naive and know my taste buds can’t take it to the extreme without me starting to break a sweat…it’s embarrassing 🙂

Anywho my kiddos enjoy a numerous amount of semi spicey foods but rotel is not one of them. Any time a recipe has called for rotel I substitute it with diced Italian tomatoes.  Just know if it’s something your family can tolerate feel free to change it out 🙂

Ingredients:

  • 1lb browned hamburger or turkey 
  • 1-2 Tbs taco seasoning 
  • 1 medium sweet onion
  •  1 green bell pepper
  • 1 red bell pepper
  • 1 15oz can of black beans *
  • 1 15 oz can kidney beans *
  • 1 15oz can northern beans* 
  • 1 15oz can italian diced tomatoes
  • 1-2 cups beef or chicken broth (I do 1 cup)
  • 1 15oz can corn
  • 1 15oz can tomato sauce
  • 1/4 cup salsa

*Drain and rinse all the beans 

Any recipe that calls for raw vegetables I make sure to chop up first!

The rest is basically dump and go!

I add the tomato sauce, broth, salsa and diced tomatoes to the crockpot first.

Next I add the beans and corn. 

Finally I add the veggies, meat and seasoning.

Be sure to mix it all up really well!

Cook on high 3-4hrs or low 7-8hrs.

Garnish with any additional toppings of your choice! We like greek yogurt and cheese.
