Healthy side dishes (7 day cleanse)

Hello fellow foodies,

Did a cleanse this week and ate a lot more of our favorite side dishes!

Roasted Veggies

  • 1/2 medium sweet onion
  • 1 red bell pepper
  • 6 oz green beans (bagged fresh)
  • 1/2 tbs lemon juice (optional or olive oil)
  • 1/2 tsp chili powder, cumin and oregano
  • Salt if desired 

Bake at 400 for 20min, stir and bake for an additional 10min.

Note:  Depending on your oven it may only take 2omin.

Used a similar method for Brussel sprouts. Just halved them and cut out centers.

Veggie fries:

If you haven’t had veggie fries before plan on them this week!! Our family LOVES  them!

We often do carrot and zucchni. 

Simply  half each one and cut into small slices/sticks.

Toss with some olive oil and your favorite seasonings (red pepper flakes, cumin,chili powder, garlic salt, pepper)

Roast on 425 for 20min!

I had none for myself after my kids and husband took a shot at them!

*center bowl is cauliflower rice 🙂

Baked sweet potato:

1 small sweet potato

If you’re sort on time this is my favorite microwave method to use instead of baking. 

Once it’s baked spread 1/3 of an avocado on  top or use vegan butter.

Cucumber Tomato Salad

(add spinach or kale)

  • 3 roma tomatoes
  • 2 cucumbers
  • 1/2 red onion
  •  1 tsp light olive oil
  • 1 tsp white whine vinegar
  •  1 tsp lemon juice
  • 1/2 tsp basil 

Pepper to taste.

Filled 2 23oz rubbermaid  containers

Followed the same with slightly less oil seasoning/no tomato and added red bell pepper
