Twice baked sweet potatoes (whole30 option)

Hello fellow foodies,

So this post is a little unique…

I had planned to follow this recipe. She has lots of yummy looking whole30 recipes. So if you’re wanting the whole30 option check out her page.

However I was lacking the sundried tomatoes and onion. I did some improvising on meals this week and accidently used them for something else. 

That’s what happens when I forget to write my meal plan out on the fridge.

Anyways here’s what I did!

First I roasted the sweet potatoes on 375 for an hour.  Just wash them and pierce with a fork 2-3 times, varying sides. 

I used the following ingredients to stuff them with:

  • 3/4lb turkey sausage
  • 1/2 cup diced Italian tomatoes
  • 4 tbs green onion

You could add seasonings but I didn’t since I used the Italian tomatoes. 

Start off by browning the sausage. 

Once it’s cooked through add in the Italian tomatoes and green onions. 

While the mixture is simmering, cut the potatoes in half and scoop out their centers into a bowl. Mash/cut them up a little.

Add the potatoe centers to the meat mixture. Let simmer 5-10min.

Scoop the mixture into each potato peel as evenly as possible. 

Bake for an additional 15-20min on 375.

My family devoured these! They were so good! You won’t be disappointed!
