Hello fellow foodies,
So a year ago I bought this cookbook. Truthfully I bought it because I have 5 sisters lol
I havent tried tons of recipes from it but we tried these two and they became instant favorites! My husband rants and ravs about the sauce on the ribs.
They’re both pretty simple!
Barbeque Ranch Ribs
- 2lbs boneless country ribs
- 1 (.25 oz) packet dry ranch mix
- 1.5 cups ketchup
- 3 Tbs yellow mustard
- 4 Tbs Worcestershire sauce
- 2 Tbs white vinegar*
- 1.5 Tbs lemon juice
- 1 Tbs honey
- 2 Tbs light brown sugar
- 1 tsp of black pepper
- Pinch of salt.
*I was in a bind and ended up using 1 Tbs of apple cider vinegar instead. Turned out the same 🙂
Simply spray your crockpot and lay out the ribs.
Mix everything listed above in a medium size bowl.
Pour the mixture over the ribs
Cook on high 3 to 4hrs or low 6 to 8 hours. I always do this recipe on low and will even wait till the next day if I don’t have time to do so.
I was headed out for errands and turned back around to quickly throw it in since I already told my husband we were having them for dinner 🙂
Cheesy Ranch Potatoes
- 4 large baking potatoes
- 4 oz cream cheese
- 1/4 cup greek yogurt (sour cream)
- 1/4 cup chopped yellow onion
- 1 cup shredded colby jack cheese
- 5 slices if bacon, broken into pieces
- 1/4 tsp salt
- 1/2 cup of milk
- 1 (1 ounce package) dry ranch dressing mix
- 4 green onions
*I dont usually add the cream cheese anymore. I also just add whatever cheese we have on hand.
Wash and pierce the potatoes. Cook on high in the microwave for 10min. Let them cool and then peel them.
Preheat the oven to 350.
I usually wait till the potatoes are ready and mix everything together at once.
Leave the bacon, green onions and 1/2 cup of cheese to sprinkle on top!
Cover and bake for 30minutes, uncover and bake for an additional 5minutes.
Often I’m impatient and only bake it for 10-15 minutes uncovered 🙈
They are so creamy! You really have to practice self control. My poor son was not happy the bacon was for the potatoes and not him lol
Last thing I’ll make is roasted carrots.
This meal has all the favorites! I was surprised how much my toddler daughter loved the ribs! It was her first time having them lol
