Hello fellow foodies,
The main part of this recipe is whole30 approved but serving on tortillas, like we did, is not 🙂 Just the same it is one of my go to recipes so I thought I’d share.
We were planning to be gone until right before dinner so this was super easy to throw in the crockpot.
- 1lb chicken breast
- 1 whole bell pepper (any color)
- 1 small red
- 1 small white onion
- 1/2 cup pico de gallo.
First spray your crockpot. Then layer it with the chicken, onions, pico de gallo and lastly bell peppers.
**I dont dice the onions just slice them (as well as the bell pepper).
Cook on high for 3.5hrs.
Remove chicken and shred.
We have had this over zoodles (zucchni noodles), tortillas, rice and even as is on ocassion.
Super easy and will not disappoint!
