Hello fellow foodies,
This is another family recipe from my Grandma! I don’t actually remember her ever making it but I stumbled upon it one day when making dinner. It’s similar to enchiladas with the layering.
Ingredients
- 2 150z cans pinto beans, drained and rinsed
- 1 19-29oz can el paso enchilada sauce
- 1 can diced green chili
- 1 small onion
- 2lbs hamburger (I use 1lb)
- 2 roma tomatoes (not pictured)
- 1/2 tsp chili powder, garlic salt, oregano and basil (optional)
First brown the meat with the onion in a skillet.
Next add in everything else except the enchilada suace.
Stir and let simmer for a few minutes until heated through.
Next layer the following in your pan:
4-6 tortillas (depending on pan size, 8×8 reccomended)
Spread 1/3-1/2 bean mixture on tortillas, depending if you want any on top layer.
Add 1/3 of the can of enchilada suace on top of bean mixture.
Sprinkle cheese on top
*There are 3 layers. You can add mixture to the top layer or just do tortillas, sauce and cheese. Since my pan was longer that’s what I did.
Bake at 350 for 45min. Serves 6 🙂
