Baked Chicken with Peppers

Hello fellow foodies,

As you know I’ve been on the hunt for delicious clean/whole30 recipes.

I stumbled upon this recipe and so many of the others looked mouthwatering… so I tested out two this week.  

Main ingredients:

  • 3lbs chicken breast
  • 1 large garlic clove, grated
  • 1/2 tsp salt
  • Pepper to taste
  • 1 medium onion, diced
  • 10 brown or portabella mushrooms diced
  • 2 large peppers,  diced
  • 1 tbs coconut oil
  • 1 cup mozerella cheese

Preheat oven to 425. I sliced my chicken breasts in half both length and width wise. 

You can toss them with the salt,  pepper and garlic or simply sprinkle it on top.

 Cover and bake for 20-25min.

While chicken is baking sautee the veggies over medium heat.

Start by heating up the coconut oil then adding the onions.

Add in mushrooms, sautee 2-3mim, then add the peppers. 

Once chicken is baked thoroughly drain the excess juices from the pan. I often switch to a 9×13 pan

Top each piece of chicken with sauteed veggies. 

Sprinkle cheese on top. 

Broil on high for 5min.

We served it with leftover quinoa and it was delicious!

We were starving by the time it was finally finished so I forgot the last couple of pictures.

My toddler devoured it and wanted more!
