Hello fellow foodies,
This is another clean recipe that looked sooo good! Super quick and easy.
Ingredients:
- 1lb sweet potatoes
- 1 small onion
- 2 large garlic cloves, minced
- 1 tbs coconut oil
- 2 large red bell peppers
- 14oz can black beans, drained and rinsed.
- 1 cup corn (I didnt have any)
- 14oz can diced tomatoes
- 1 tbs cumin, divided
- 1/2 tbs taco seasoning, divided
- 1 tsp salt, divided
- 1/2 lime, juiced
- 1 cup cheese
- 2 medium avocados
- 2 green onions
- Greek yogurt and cilantro (optional)
Start off by preheating your skillet over medium high heat.
Heat coconut oil. Add cubed potatoes and first half of spices. Cook for 5min stirring occasionally.
Add peppers, onion, and garlic. Cook for 3min stirring occasionally.
Add black beans and corn (optional) cook for another 2min.
Add diced tomatoes and remaining spices. Bring to a boil. Cover and reduce heat to low. Let simmer for 15min.
Check to see if potatoes are tender. Add lime juice and sprinkle cheese.
Broil on high for 5min.
Serve with any desired toppings!
My husband especially loved this dish! He went back for seconds and thirds…
