Hello fellow foodies,
I love nachos! I have made so many variations over the years…
This is one of our favorites though and we often have everything on hand.
Ingredients:
- 1lb hamburger, browned
- 1 15oz can diced tomatoes
- 1 pck taco seasoning
- 1/4 cup creek yogurt
- 1/4 cup diced green onions (6)
- 1 yellow bell pepper
- Chips/mini bell peppers*
- 1/2 cup cheese
First mix hamburger,diced tomatoes, greek yogurt and taco seasoning. Cook on medium high heat than let simmer till it’s heated through.
Next spray 9×13 pan and layer with chips.
Than layer half of the meat mixture.
Lastly sprinkle with half the chopped veggies and cheese.
Repeat layers once more.
Bake uncovered at 350 for 20min.
*If you want an even healthier verison…simply omit the chips and use mini bell peppers instead.
My son LOVES mini bell peppers so he devours it when I make it this way.
