Hello fellow foodies,
It’s no surprise my family loves tacos! It’s one meal, no matter how I make it, I can count on my kids eating.
Ingredients:
- 1 15oz can black beans, drained and rinsed
- 1/2 cup red onion, minced
- 1 roma tomatoe, diced
- 2tbs chopped cilantro
- 1 tsp cumin
- 1 tsp paprika
- 4oz pepper jack cheese
- 4 oz tex mex cheese
- 8 corn tortillas.
I usually double this recipe since the leftovers heat up well.
To begin heat up your griddle.(You can also make these using a large skillet I just prefer our griddle).
Than heat up the tortillas for 15-20 seconds each in the microwave. (This makes it easier to fold them).
Next mix together all the ingredients minus the cheese.
One by one place the tortillas on griddle. Place one half on the griddle holding the other half up so you can fold it on top.
Sprinkle with cheese, add 3-4 tbs of mixture, sprinkle with a little more cheese and fold tortilla.
I do pepper jack,bean mixture, tex mex cheese.
Let each side cook for 2-3min before flipping.
Serve as is or with additional toppings.
Plenty flavorful and filling without extra toppings!
