Hello fellow foodies,
This is one of my favorite lunches! I often bake it up and store it in 4-5 containers for the week.
Yesterday we spent the day exploring and I needed something easy for dinner. We had already eaten out for lunch and I didn’t want to go out for dinner as well. This recipe quickly came to mind! There’s never any leftovers when I make it!
We ate lunch late and my husband said he wasn’t that hungry but somehow managed to finish this off….
Preheat oven to 500
Imgredients:
- 1lb chicken breasts, cubed
- 1 zucchni, diced
- 1 cup broccoli
- 1/2 onion (I prefer red), diced
- 1 bell pepper (any color), diced
- 1/2 cup cherry tomatoes, sliced in half
- 1tsp chili powder
- 1/2 tsp paprika, basil, oregano, salt and pepper.
- 2 tbs olive oil
First chop up all the veggies.
Next add chopped chicken and spices. Mix well.
Lastly line and spray a baking sheet. Spread mixture evenly.
Bake for 13-15min.
Let cool and serve as is or on top of quinoa.
Seriously so quick, easy, and delicious! It’s so full of flavor that you’ll find yourself making it often 😉
