Banana Pancakes 

Hello fellow foodies,

My husband took a quick weekend trip to see his Mom for her birthday. While he was there his Mom made this pancake recipe that he loved. It was similar to ones I’ve made but I thought I would share 🙂


1/2 cup water
4-6 eggs (holds pancake together)
2 cups oats
Blend ingredients

(Add the following one by one and continue to blend)
-1/2 to 1 tsp salt
-1/2 to 1 tsp cinnamon (optional)
-few sprinkles of nutmeg (optional)
-1 tsp vanilla
-add bananas 1 at a time up to 4
-add more water if you like them thinner (too much and they start sticking to grill)
Coconut oil to cook (cold press in glass jar-should melt in kitchen when 80 degrees)
As the recipe shows….dump the water, oats, and eggs in a blender. Blend throughly. 

Add the rest of the ingredients one by one. *I stuck the seasonings and bananas through the hole in the lid so I didnt have to stop and restart the blender.
I didnt add any additional water and used 6 eggs.

I cooked them on our griddle. They don’t bubble as much as regular pancakes so just watch the edges and flip after 2-3min. 

Once there done serve them up with butter, syrup or peanut butter 🙂

Super quick and easy! Kid aprroved! Makes around 15 pancakes 🙂
