Hello fellow foodies,
This is another sheet pan recipe I am obsessed with! It just requires a couple bowls and a baking sheet.
Recipe:
- 1 cup cubed potatoes (4 medium/large) *
- 1 cup thin sliced carrots (bought mine this way)
- 3 cups chopped broccoli
- 1.5 lbs cubed chicken breast *
*1in cubes for both the chicken and potatoes.
Seasoning (mixed in small bowl)
- 1/2 jar traditional pesto (8oz jar)
- 1 tsp chili powder
- 2 tsp dry ranch mix
- 3-4 minced garlic cloves
- 1/4 tsp salt and pepper
Preheat oven to 400.
Start off by mixing the potatoes with 2.5 TBS of the seasoning mixture.
Line a banking sheet with tin foil (I ran out) and spread potatoes in a single layer. Bake for 15min.
While the potatoes are baking… chop and mix the remaining ingredients and seasoning.
Once the potatoes are done push them off to the side, still in a single layer, and spread out the chicken and veggies. Bake for another 15min.
Sprinkle with fresh grated parmesan and bake for 5min or until cheese is melted and chicken is cooked through.
Lastly serve it up and try not to eat the whole pan for yourself! This is another one I love to divide into containers for lunch!
