Sheet pan mini meat loaves and veggies

Hello fellow foodies, 

 I only have one new recipe to share this week since “Spring cleaning” was in full swing at our house. 6 trash + 10 donation bags later and I’m doing happy dance! Patted myself on the back more than once 😉 
Anywho…I may be slightly obsessed with sheet pan meals and the easy clean up.  Most of our meals this week were freezer meals but I’ve been dying to try this one so I did!

My husband was never a huge fan of meatloaf and neither was I but we both enjoyed the hobo crockpot meatloaf and potatoes so I figured why not give another meatloaf recipe a whirl.  We have tons of frozen beef so needed some variety. 

**I tweaked my recipe based on what I had on hand and seasoning preference. 

The most time consuming part is the meatloaf. 

Meatloaf ingredients

  • 1lb ground beef
  • 1 small onion, diced
  • 2/3 cup italian breadcrumbs
  • 2 minced garlic cloves 
  • 3 tablespoons ketchup + 4tsp for garnish 
  • 1 egg
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 tbs parmesan cheese
  • 3oz Monterey jack cheese,  diced into 24 cubes.

Preheat the oven to 400 degrees.

Mix everything for the meatloaf together in a large bowl, minus the monetary jack cheese. 

Than divided out into 8 lumps.

I took each lump and placed 3 cubes of cheese in the center. I then covered them completly, forming a loaf.

I set the 8 meatloaves on one side of the sprayed cookie sheet. I then drizzled them with a little ketchup.

Next the veggies!


  • 12 oz of red potatoes, cubed (4-5 medium/small potatoes)
  • 1 tbs of olive oil 
  • 1/2 tsp garlic salt
  • 1/4 tsp chili powder, oregano and basil. 

I placed the potatoes on the opposite side of the baking sheet.

I then placed the sheet in the oven and set a timer for 13-15min (depending on your oven).

While the meat and potatoes were baking I prepared the green beans.

Green beans:

  • 8-10oz of whole green beans
  • 1 tbs of olive oil 
  • 1/2 tsp garlic salt
  • 1/4 tsp chili powder, oregano and basil. 

Once the timer went off I added the green beans in the center and inbetween the gaps of the meat loaf. I returned the sheet to the oven and baked for an additional 10min. 

My mouth was watering when I pulled it out of the oven! It was a huge hit! Even for our kids!!!
