Salsa chicken 

Hello fellow foodies,

This is one of my go to meals when I haven’t gone grocery shopping in a while….

It’s super easy and similar to the queso slasa chicken I’ve shared in the past. 

Ingredients:

  • 2-3 chicken breasts
  • 2 cups salsa
  • 1 15oz can black beans
  • 1 cup of frozen corn
  • 4 oz cream cheese (optional)

First all you do is place your fresh or frozen chicken breasts in the crockpot. Cover and set on high for 3.5hrs.

After 2hrs and 15min remove lid and shred  chicken inside crockpot with a handmixer. (You can also drain juices I just think it stays heated better when it’s not removed)

After chicken is shredded add the salsa,  beans and corn. 

You can also cube and add the cream cheese if desired.  (I dont usually have any on hand anymore). Continue to let cook for an hour. 

Serve with rice,  tortillas,  or quinoa!
