Chicken Caesar pasta salad

Hello fellow foodies,

For those who aren’t huge fans of greek yogurt or dijon mustard this might be more of an acquired taste. 

You also only use about half the dressing pictured, I was tired and read it wrong.

Anyways my friend made it and I thought it was delicious and wanted to share it with all of you!

Ingredients:

  • 12.5oz boneless skinless chicken breast (I used 14oz)
  • Salt, pepper, paprika
  • 7oz pasta noodles
  • 4 leaf lettuce pieces, shredded
  • 1 pint cherry tomatoes
  • 4 tbs croutons 

Dressing:

  • 4 TBS greek yogurt (I read it wrong and did 4oz…🙈)
  • 4 TBS lemon juice
  • 2 Tbs grated parmesan
  • 2 tsp dijon mustard
  • Pinch of salt and pepper.

*you can also add a little sweetner to conteract the dijon. 

First prepare your chicken.  Remove fat,  cut into strips and rub in the seasonings. I grilled ours on a George foreman.  Once it’s done cut it into bite size pieces and let it cool. 

 While the chicken is grilling boil noodles according to package.  Drain and rinse with cold water. Place in large mixing bowl. 

While the noodles are boiling mix up your dressing until there are no longer lumps. 

Then while the chicken is cooling add in the tomatoes,  croutons,  and lettuce with the noodles. 

Finally add in the chicken and dressing. Be sure to mix well. 

You could defintely get away with using much less dressing.  Little more creamy this way but works both ways. Mutt son loved it! Caesar salad is his favorite though.
