Found the recipe for this malibu chicken when browsing pinterest and it looked delicious!
Ingredients:
- 4 chicken breasts
Malibu dipping sauce:*
- 1/2 cup olive oil mayonnaise
- 3 tbs yellow or dijon mustar
- 1-2 tbs powdered sugar
Crumb topping:
- 3/4 cup breadcrumbs**
- 3/4 cup parmesan cheese**
- 2 tsp granulated garlic
- 1 tsp granulated onion
- Pinch of salt and pepper
Top with:
- 8 slices deli ham
- 4 pieces swiss cheese
* I half this recipe since we don’t use any for dipping.
**I usually only use 1/2cup of breadcrumbs and parmesan.
Preheat oven to 350 and spray a 9×13in dish.
I bought my chicken from winco and it had exactly 4 breasts.
As the original poster mentioned this recipe does not end up dry, it is moist and delicious! It may depend on the chicken you use though.
After removing the fat from your chicken set aside and mix up your dipping sauce. Take 1/4 cup off the sauce and slop some onto each piece of chicken.( I than just rub it on).
After each piece is lathered roll it in the crumb topping. A lot sticks but I still sprinkle the extra on top inside the pan.
Bake for 30-40min depending on your oven. I baked mine for 30min.
Remove breasts from oven and layer each breasts with two slices of ham and one slice of swiss cheese.
Return breasts to oven until cheese is melted, about 5min.
Serve with roasted veggies and enjoy!
It was sooooo good and easy to make! Even my toddler daughter devoured it!
