Shrimp tacos

Hello fellow foodies, 

I’m a huge fan of shrimp! My husband doesn’t really like fish though so I rarely make it.  I had stuff for tacos and some frozen shrimp in the freezer and decided to combine it. It was delicious! For those who dislike shrimp it is masked by all the other toppings so just give it a try 😉

Ingredients:

  • 1lb shrimp, devined and shelled
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • Pinch of salt and pepper 
  • 2-4 tbs of olive oil (avocado oil)
  • 6-8 tostadas
  • 1 can refried beans

Desired toppings

  • Bell peppers
  • Tomatoes
  • green onions
  • avocados

First heat up your beans. I did 2 cans so we would have leftovers.  I didn’t double up the shrimp because our kids aren’t huge fans either.

While the beans are heating up (stir occasionally) you can make your tostadas. You can buy premade tostadas but I always have corn tortillas on hand. 

Next defrost shrimp in a large bowl.  Drain any excess water and mix in seasonings. 

Let shrimp cook a few minutes on each side.  I drain the excess juices and then cook them a little longer. 

While the shrimp are cooking you can chop up all your desired toppings. 

I set it up so everyone can serve themselves. Much easier than assembling all of them.
