Fish n Chips

Hello fellow foodies,

Posting earlier this week because I have a crazy day going on tomorrow.

This recipe was my absolute favorite this week! My friend gave it to me and my family graciously accepted havung fish for dinner again.  I’ll convert them soon enough 😉

So I’ve never actually had fish n chips but when my friend made this I was hooked, so full of flavor! 

Ingredients for fries:

  • 3-4 medium sized potateos
  • 1 tsp season salt 
  • 1/4 tsp chili powder 
  • 1/4 tsp garlic powder
  • 1/4 tsp oregano 
  • 1/4 tsp basil 
  • 2 tbs olive oil
  • Sprinkle of cumin

Ingredients for fish:

  • 10oz of cod, divide into 6 pieces.
  • Season salt and pepper
  • 1 cup whole wheat seasoned bread crumbs or Panko with desired seaonings.
  • 1 tsp minced garlic
  • 2 tbs olive oil
  • 1/3 cup flour
  • 1 egg
  • 1-2 tbs of dijon mustard

Additional ingredients:

  • Olive oil mayo and ketchup for fry sauce. 
  • Sliced lemons and/or limes.

First peel and cut the potatoes. (1/4 inch thick is ideal but mine didnt all turn out that way)

Let soak in cold water for 30min.

Preheat oven to 425 and move oven rack to 2nd from the top. 

Once 30min have passed dry fries throughly. (Dont leave any wet or they will end up soggy.)

Mix in olive oil and seasonings. 

Line baking sheet with parchment paper and spread fries in single layer. Bake for 15min. Remove from oven and flip fries. Bake an additional 15min.

While fries are baking heat olive oil in skillet and add bread crumbs and minced garlic. Cook until slightly browned.

Next place flour in a bowl, then whisk egg and mustard together in another bowl. 

Generously coat fish in flour, egg mixture than breadcrumbs. You should use all of these up.

Push fries to either side of the baking sheet and place fish in the center. Bake for an additonal 9-12min. Broil for 30 seconds as well if you want it to be extra crispy. 

Serve with lime/ lemon wedges and fry sauce. 

Little time consuming but soooo worth it! Your taste buds will thank you!
