Southwest casserole 

Hello fellow foodies,

This is similar to a lot of rice dishes I’ve made in the past. Yet it is still slightly unique so thought I would share it.

It’s also super quick and easy to throw together! 

Ingredients:

  • 2 tbs olive oil 
  • 1lb ground turkey 
  • 1 small onion chopped 
  • 2 garlic cloves, minced 
  • 1.5 tsp ground cumin
  • 1tsp chili powder
  • 3/4 tsp smoked paprika
  • 1/2 tsp salt and pepper 
  • 2 cups cooked brown rice
  • 4oz can diced green chiles
  • 1 14oz petite diced tomatoes 
  • 1.5 cups salsa
  • 1 15oz can black beans, drained and rinsed
  • 6oz frozen corn 
  • 1/4 cup chopped cilantro
  • 1/2 cup monteray jack cheese.

First preheat oven to 350 and spray 9×13 pan.

Next heat olive oil in skillet. Add turkey and onion. Sautee until meat is cooked throughly. Drain juices.

Once meat is cooked throughly add in spices and sautee 1-2min

Then add in cooked rice, chili, diced tomatoes, beans, corn and salsa. 

Note: It was a crazy night so I forgot the salsa and it was a little dry. Don’t do that 😉 I added some when I served it though

After everything is mixed together transfer to baking dish. Bake for 20min. Sprinkle cheese on top and continue to bake until cheese is melted, 3-5min.

This one is always a crowd pleaser and I usually always have the ingredients on hand.  Makes for an easy last minute burrito bowl.
