Hello fellow foodies,
My daughter has become obsessed with vegetables in the form of noodles. Her favorites are zucchini(spagetthi) and sweet potatoes plain. Wasn’t quite sure what to pair the sweet potatoes with for the rest of us but they were perfect with these taco bowls.
Ingredients:
- 1.5lbs lean ground beef
- 2 cups black beans
- 4-5 medium sweet potatoes, peeled and spiralized
- 1 package taco seasoning (or 1/4 homemade)
- 4 tsp avocado or olive oil
- 2-3 tsp garlic salt
- 4 cups cherry tomatoes
- Spring mix lettuce
- 2 limes for garnish
- 4-5 tbs Boathouse salsa verda salad dressing
- Top with avocados (ours werent ripe yet)
Start off by browning the meat. Once it’s cooked through add the beans and taco seasoning and cook till the beans are heated through.
Transfer the meat mixture to a bowl. Using the same skillet sautee the sweet potatoes for 2-5min adding in the oil and garlic salt.
I use this sprializer from Amazon.
After that get a bowl and layer the salad, sweet potatoes, meat, tomatoes, lime and dressing. My kids devoured this and wanted seconds! It was sooo good 🙂
We have made so many different kinds of tacos but with a few tweeks we ended up with this one. Most time consuming part is peeling and spiralizing the potatoes but other than that it’s super quick and easy!
