Hello fellow foodies,
Incase you haven’t noticed over the past several months my family loves tacos. Taco salad and soup included! This sweet potatoe taco bowl being our favorite. However sometimes we like to change out the hamburger and do chicken fajitas or tacos instead.
I’m trying hard to branch out more and include foods I’m normally not a huge fan of…at all. This week pineapple was the ingredient I chose. My husband loves it but I don’t really like it. I want our kids to like it though.
Anywho the first recipe I decided to incorporate it in was chicken tacos with a pineapple salsa!
Lots of ingredients but it’s mainly spices so don’t be intimidated!
Ingredients:
- 16 corn tortillas
Grilled Chicken:
- 1.75 lbs. chicken breast, raw
- 4 tsp. avocado or olive oil
- 1-2 tsp. chili powder
- ½ tsp. chipotle seasoning
- ½ tsp. ground cumin
- ½ tsp. smoked paprika
- ½ tsp. onion powder
- ½ tsp. garlic powder
- Sprinkle salt and pepper
- 2 Tbs. lime juice
Pineapple Salsa:
- 1 small pineapple, diced
- 2 red bell peppers, diced
- 1 small red onion, diced
- 1-2 jalapenos, diced
- ½ cup cilantro, chopped (optional)
- 1 Tbs. lime juice
- 1/4 tsp ground ginger
- 1/4 tsp ground cumin
- 1 tbs avocado or olive oil
Additional toppings (optional):
- Greek yogurt
- Chopped lettuce
First- 2ish hours before you’re ready to eat marinate your chicken with the listed spices, oil, and lime juice.
Once you’re ready to eat heat up your grill or skillet, I use a George foreman, and prepare your salsa. Turn your oven broiler on high. Set your oven rack in the middle.
Line an 8×8 dish with foil. Mix together all the salsa ingredients in a large bowl. Dump the salsa in the lined 8×8 dish. Broil for 10min, stir, and broil for an additional 5-10min.
Sidenote: If you dont have a pineapple cutter you need one! I got mine from bed bath and beyond. It cuts it in slices and dices it. I literally cut the whole pineapple in under 5min. It’s a total game changer!
While the salsa is broiling….grill your chicken and cut it into strips.
Serve the chicken up on tortillas and top it off with salsa and lettuce!
It’s full of flavor and oh soooo good! I didn’t mind the pineapple at all in this recipe.
