Hello fellow foodies,
This has become one of my favorite quick and easy recipes. You can bake it in the oven or quickly in the microwave (1-3min) if your short on time. My kids love it!
- 8 whole grain tortillas
- 1 cup Stubbs BBQ sauce
- 1 lb. chicken breast, cooked & shredded
- 2 cups red onions, sliced or diced
- 4-8 cups spinach, chopped
- 2 cups low-fat mozzarella cheese, shredded
- 1 tbs cilantro paste or 8 tbs fresh Cilantro, chopped
Note: I made 6 for our family but the recipe yields 8 so I only did 2/3 of it. Mostly because I find these a little dry as leftovers.
Preheat oven to 375 degrees.
Place tortillas on a baking sheet lined with parchment paper. Depending on your tortilla size you may only fit a few.
Additional note: If you’re using cilantro paste mix it in with the onion. If you’re using fresh Cilantro sprinkle it on top at the end before baking.
First Spread 2 Tbs of BBQ sauce on each tortilla.
Next layer ¼ cup cheese, 1/2-1 cup spinach, small handful of chicken, ¼ cup onions and cilantro(if fresh)
Bake for 10-15 minutes or until golden brown.
Serve as is and enjoy!
