Hello fellow foodies,
I LOVE pizza. My best friend and I would split one as teenagers on top of cheesy garlic breadsticks. It is my weakness!
I decided to finally try out a different sort of pizza crust. Wasn’t brave enough to do cauliflower but this one is made out of rice.
It’s a different sort of texture ,obviously, but we loved it. Leftovers were just as good. I’ll have to do simple cheese ones for my kids next time.
Ingredients:
- 4 cups spinach, chopped
- 2 tsp. minced garlic
- 1 cup red onion, minced
- Dash of sea salt
- 24 asparagus stalks, chopped
- 4 whole eggs
- 4 egg whites
- ½ tsp. dried oregano
- ½ tsp. black pepper
- 3 cups white jasmine rice, cooked
- ¼ cup Parmesan cheese
- 1 cup pizza sauce
- 1 cup low-fat, shredded mozzarella cheese
- 6 Italian chicken sausages, chopped
- 4 cups fresh white mushrooms, sliced
- 1 cup green bell pepper
- 1 cup red bell peppers
- Fresh basil or 1tbs basil paste.
Sautee garlic and onion for 2min. Add spinach and cook until wilted.
Add the aspargus and cook until crispy.
Whisk together eggs and seasonings. Add in cooked rice, spinach mixture and parmesan cheese.
Mine was less dough like just to warn you. I put a heaping cup of the dough mixture and pressed it down on the baking sheet lined with parchment paper.
Bake crust for 10mins. Broil 1-2 min (if desired)
Sautee sausage and veggies for 10min. Add basil paste and mix throughly.
Layer each pizza with sauce, cheese, and 1/4 of veggie mixture.
Turn down to 350 bake 5-10min or until cheese is melted.
Let cool and serve!
I was hesitant but it was perfect for our friday night pizza night! Let me know if you try it or have any tips for more dough like crust.
