Hello fellow foodies,
We had family in town this weekend and went to pick fresh blueberries together. The boys went on a hike and we did this as part of our girls day. My daughter ate most of what she picked 😉 It was a lot of fun though and surprisingly our first time picking more than wild berries.
With all the fresh berries we had to use some to make our favorite blueberry crumb cake 😍
Preheat oven to 375.
- 2 cups flour
- 2.5 tsp baking powder
- 3/4 tsp salt
- 1/4 cup butter, softened (not melted)
- 1 egg
- 3/4 cup sugar
- 3/4 cup milk (I use vanilla almond milk)
- 2 cups(one pint) of blueberries.
Mix everything together except blueberries. The batter will be thick and sticky.
Fold in blueberries.
Pour batter into greased 8×8 pan.
Crumb topping ingredients:
- 1/2 cup sugar
- 1/3 cup flour
- 1 tsp cinnamon
- 1/4 cup butter, softened
Mix together with a fork.
Sprinkle/spread on top of cake batter.
It takes a little prep and baking time but it is worth the wait! You will love it!
We’ve had it both for breakfast and dessert with some ice cream. Delicious!
