Hello fellow foodies,
I don’t know how your guys’ summer gardens have been doing but ours is always overrun with zucchni! So this week I wanted to share a couple zucchni recipes!
This recipe is super easy and can be done in under 20min!
Ingredients:
1 1/2 pounds ground beef
1/2 onion, diced
2 cloves garlic minced
2 medium zucchini sliced and quartered
1 can rotel or Italian diced tomatoes(less spicey)
1/2-1 tbs chili powder
1 tsp ground cumin
1/2tsp onion powder
Pinch of salt and pepper.
Sautee olive oil, onion, and garlic.
Add meat and cook until browned.
Mix in diced tomatoes, spices, and zucchni (I used a medium/large zucchni from our garden sliced it poked out center seeds and diced it)
Let simmer 5-10min, stirring ocassionally.
Serve as is or over rice!
