Cortez Enchilada Sauce (chicken enchiladas)

Hello fellow foodies,

​This is a delicious enchilada recipe from my Grandma’s cookbook!

 Had a cousin visit who mentioned adding chicken instead of just cheese and we love it! Super quick and easy when you’re in the mood for Mexican food! Which I always am 😉

Ingredients:

  • 2 tbs corn starch
  • 1/4 tsp oregano
  • 1/2 tsp garlic
  • 2 tbs chili powder
  • 1/4 tsp cumin
  • 3 tbs olive oil
  • 2 cups beef broth.
  • 12-14 corn tortillas
  • 1 large can chicken
  • 1/2-1 cup cheddar cheese

Mix oil with dry ingredients until smooth. 

Pour into a skillet, on medium high heat, and slowly add broth. Keep stirring until hot, or it will get lumps. Heat until thick.

Mix 4-5tbs of the sauce in with chicken. Heat tortillas in microwave (10 secs each or 3 for 30secs). 

Spray 9×13 baking dish. Then dip tortillas in sauce mixture. Put a scoop of chicken in center, sprinkly some cheese, roll it and place seam down. 

Pour remaining sauce on top of the enchiladas and sprinkle desired amount of cheese.  

Bake for 30min.

That’s it,  serve it up and enjoy!
