Hello fellow foodies,
If you weren’t on the instant pot band wagon before this recipe will put you there!
It’s so much easier than the traditional method and you have mashed potatoes in 20min!!!
Ingredients:
- 3lbs potatoes
- 1 cup of water (maybe a little extra)
- 1/2cup of butter (or a cup if no cream cheese)
- 2-3oz cream cheese
- 1-2tbs ranch dressing mix
- Splash or two of milk
Peel and cube potatoes. This is the most time consuming part.
Place potatoes in instant pot and pour in water. I did closed to 1.5 cups but 1 would have been better.
Make sure the lid is sealed and not on quick release. Set manual high pressure for 6min. Quick release when finished.
Mix in butter, cream cheese, milk and ranch. I did it with a hand mixer directly in the pot!
I wasn’t feeling extra ambitious so I just heated up the frozen breaded chicken patties from Costco and steamed some green beans.
Dinner was ready in 20min and everyone loved it! Kid friendly too which is always a plus!
