Instant pot chicken fajita pasta

Hello fellow foodies, 

It is no secret I’ve been loving my new instant pot! Everything I’ve made we’ve enjoyed so far. 

My friend shared this recipe and I tweaked a few things to make it kid friendly.  It was sooooo good! I’d say it serves 6-8. 


  • 1-2lb raw chicken breast, cubed
  • 4 tbs olive oil
  • 2-3 bell pepper, diced
  • 1 tbs Minced garlic
  • 1 medium onion, diced 
  • 1 package of fajita seasoning, divided
  • 12oz penne pasta
  • 1.5 cups chicken broth
  • 14.5 oz can italian diced tomatoes

First select sautee, high heat. Add the oil and once hot add chicken and cook until white.

Chop peppers, onions and garlic.  Mix in with chicken and fajita seasoning.

Cook about 2min or until veggies are slightly tender.

Add broth, tomoatoes (with juice), and dry pasta. Make sure noodles are covered. 

Place on lid and set it on manual high pressure for 5-6min. Quick release and stir.

Only takes 20min if chicken is defrosted. Super quick and easy! I love how much more flavor the noodles absorb when cooked in an instant pot! Let me know what you think!
