Hello fellow foodies,
Due in a week but still occasionally finding the time to experiment with some new recipes!
Tonight’s dinner was stuffed peppers and they were sooo good I had to share! My husband is always requesting lasagna when I ask him what he wants for dinner. Usually this is the recipe I use but this time I wanted to try a more low carb option. It’s super quick and easy!
Ingredients:
- 4 large green bell peppers (or any color)
- 1lb ground turkey
- 1 small yellow onion diced
- 1 24oz jar of tomato and basil pasta sauce
- 1 cup skim-milk ricotta cheese
- 1 cup shredded mozzarella
- 1/2 cup Parmesan cheese
- 1-2TBS with fresh or dried parsley flakes
Start by preheating your oven to 400 degrees. While it warms up cut the peppers in half and remove the seeds and stem.
Line a large baking dish with parchment paper and lay the peppers out on it. Let them bake for 20min.
While peppers are baking brown your ground turkey. Add onions and cook until translucent. Then dump in your sauce and simmer until heated through. Set aside.
Pull your peppers out of the oven and spread some ricotta cheese at the bottom of each one.
Once the ricotta is spread you can evenly split the meat mixture amongst the peppers.
Lastly sprinkle both the mozzarella and Parmesan cheese on top. I used parsley flakes this time and sprinkled that on top as well.
Which cheese you use and how much you is personal preference but these are the ones I used.
It is delicious though! My mouth is watering again just thinking about it!
