Hello fellow foodies,
It has been a long time since I’ve posted any recipes on here! The past couple of Sunday’s I have made this recipe and it was too good not to share! I was looking for a good healthy waffle recipe and altered a couple that I found online. These were so light and fluffy I saved the recipe!
Makes: 5-6
Ingredients:
- 2 large eggs
- 1 3/4 cups milk (3/4 cups unsweetened almond milk)
- 1/2 cup plain Greek yogurt
- 1.5 Tbs honey
- 1/2-1tbs stevia extract
- 1tbs +2tsp baking powder
- 1/4 tsp salt
- 2 cups of all purpose flour (half almond flour*)
*Almond flour bakes a little differently and it’s pricey….so I haven’t been brave enough to only use that and test around with other ingredients. If you do let me know!
I mix all the wet ingredients first, including the honey, until it’s mixed well and bubbly.
Then I mix in the dry ingredients until you get a similar look. It’ll be runnier then you’re use to but that’s the magic of it!
This is the stevia extract I use if you’re not familiar with how it looks.
I have a double cuisinart waffle maker I got off amazon. I bought it on sale during prime day.
I cook the waffles on 4.5 using it and fill each one with 2/3(ish) cups of batter.
Once they’re all done we serve them with berries, bananas, pure maple syrup, and whip cream (remember I said semi healthy).
